Limestone canyons, live oak motts and cedar breaks an hour west of San Antonio hold axis deer, blackbuck, fallow deer, aoudad, scimitar-horned oryx, red stag, mouflon and Japanese sika, species that have thrived here for generations. Because exotics are private property under Texas law there is no closed season, no bag limit and no state tag, so you can hunt all 365 days of the year. Axis bucks peak in hard antler and rut from May through August, which is why the Hill Country stays busy through a Texas summer when almost everything else is closed.
